Protein + Pep = Tasty

For lack of anything better to write, today I’m gonna share a recipe with you. I call it a ‘Soyaccino’ and it’s my favorite summer time breakfast drink. It’s like a Starbucks Frappucino, but with more nutrition and less sugar.

You will need…

* A blender.
* 1/2 – 1 cup strong brewed coffee which has been refrigerated until cold.
* 8 – 10 coffee ice cubes. (When you’re making the coffee to refrigerate for this recipe, make some extra and pour into ice cube trays and freeze.)
* about 1/2 cup of your favorite soy milk (I like 8th Continent brand, vanilla flavor.)
* about a 2 oz. chunk of silken tofu
* assorted sweeteners and flavorings

Chuck all but the last item into the blender, and blend until the ice is thoroughly grated, and everything is frothy. Check the consistency. If it’s runnier than you’d like, add either more coffee cubes or more tofu. Now add your sweeteners and/or flavorings and blend a bit more. If you don’t mind sugar, by all means use the real stuff. I use a faux sugar like Splenda. There are also several VERY tasty sugar-free coffee flavoring syrups out there that are great additions. Another thing that’s good in this is about 1/2 tsp. of cocoa powder, for a mocha soyaccino. You can make it as healthy or unhealthy as you like! Be creative! Enjoy the buzz!

Makes about 1 large thermal travel mug-ful.
