You’ll never know it’s good for you!

I can hear the chorus of “ewwws” now…cookies made out of high fiber cereal?  I didn’t believe it either, but these are goooood!  And super low in fat!  If you could find a reduced-sugar brownie mix to use in the recipe, they’d be healthy on that front, too.

What I like about these cookies is how chewy they are.  Eventually they get really crunchy outside, but even then they retain a chewy center.

Fudgey Fiber Cookies

1 box (1lb. 2.3 oz) brownie mix
2 cups Fiber One cereal
1/3 cup water
1 egg
1 Tbsp. Vegetable oil
2 tsp. Vanilla
1/8 tsp. Cinnamon
1/4 – 1/2 cup mini chips (chocolate, butterscotch, or peanut butter)

1. Heat oven to 350. Line cookie sheet w/parchment paper. In a large bowl, stir all dry ingredients, then add liquids. Stir until thoroughly combined.

2. Drop by rounded tablespoonfuls 2 inches apart on cookie sheet.

3. Bake 12 minutes or until set. Remove wire rack to cool.

Makes 3.5 dozen cookies.
