Kitty Treats

Every Yule, we get little gifts in our stockings “from the kittehs.”  Usually it’s some sort of snack food.  (Hey, kitties aren’t wealthy.  And they like treats.)  Almost always I get chocolate-covered espresso beans (good kittehs!) and BW gets trail mix or nuts or one of those hippie snacks that he likes.  This year the cats got a can of Blue Diamond Rosemary Black Pepper Almonds for BW, and they were SO good we tried to formulate a knock-off recipe before BW goes back to work and takes his almonds to the office with him.

These are fantastic, classy-looking, and will make your house smell like heaven.  I would absolutely serve these at a swanky little cocktail party, if I ever hosted such a thing.

 

Rosemary Peppered Almonds

 

2 egg whites

1 Tbs. honey

1 Tbs. olive oil

 

3 cups raw almonds

 

2 Tbs dried rosemary

2 tsp. coarse Kosher salt

1 tsp. black pepper

1 tsp. red pepper flakes

 

Preheat oven to 325 (use convection setting if possible).

Wisk together egg white, honey, and oil until egg white is foamy.  Mix in almonds and stir until evenly coated with egg white mixture.

Grind the rosemary and red pepper in with a mortar and pestle until the rosemary is reduced to small pieces.  Mix in salt and pepper.  Toss spices over nuts and stir well.

Bake in a single layer on a lightly oiled baking sheet for 30-40 minutes until almonds appear dry and shiny.  Stir occasionally to prevent sticking.

Cool thoroughly and store in airtight container.
