Experiments With Food

Ever since one day on a whim I ate a handful of chocolate-covered espresso beans along with a handful of white chocolate morsels, I’ve been trying to come up with a cookie that would replicate that delicious flavor. Here’s what I have so far:

White Chocolate Mocha Cookies

3 Tbs. Kahlua
5-6 tsp. Instant coffee granules

2 sticks butter (melted)
1 cup brown sugar
1/2 cup white sugar
1 tsp. Vanilla

2 cups flour
1 tsp. Baking soda
1 tsp. Salt
1/4 cup baking cocoa powder

1 egg, plus 1 egg yolk

6oz. White chocolate morsels

NOTE: This recipe will yield very soft, chewy cookies. If you like crunchy cookies, you are evil and should not use this recipe!!

Add coffee granules to Kahula. Stir until everything is dissolved. Set aside.

Pre heat oven to 350.

Combine flour (for chewier cookies, use Bread Flour rather than All-Purpose), soda, salt, and cocoa in a small bowl. Set aside.

Allow melted butter to cool a bit, then stir in sugars and vanilla and mix until smooth. Add eggs. Stir some more. Gradually add in the flour mixture. When combined, add Kahula mixture (make sure to get all the good coffee sludge that will have formed at the bottom of your container) and mix well. Then add white chocolate morsels.

Drop by small spoonfuls onto ungreased cookie sheets. Careful not to make them too big! Bake for 9-11 minutes. Do not overbake, or they will not be chewy! Take them out of the oven even if they look undone.

Cool on wire racks and consume!

I think this recipe could still use some tweaking. When I made them, I used 4 tsps. of instant coffee, but I felt the dough could have had more coffee flavor, so in this version I bumped it up to 5 or 6. I also think what would really make it good would be the addition of maybe 1/4 cup of slightly pulverized choc.-covered espresso beans, but alas, I didn’t have any. The big bag the cats got me for Mother’s Day finally ran out. Maybe they’ll get me more for my birthday. But if anyone else tries it, let me know how it goes!
