Lemony Goodness

This recipe was found by one of BW’s co-workers.  I tried the cookies she made, and had to know it.  It’s so simple, it seems wrong to even call it a recipe.  It’s one of those really 1950′s “better living through consuming processed food!” sort of lazy, white-trashy recipes that you (or at least I) are kinda embarrassed to admit to using.

But screw it, I have such a weak spot for anything lemony, and these babies kick ass!  And so much easier than making lemon squares!

 Lemon Krispy Cookies

1 box of lemon-flavored cake mix

1 stick of butter, melted

1 egg

1 cup of Rice Krispies

optional powdered sugar for decoration

Preheat oven to 350.  Mix together cake mix, butter, and egg.  Stir in Rice Krispies until well-blended.  Roll the dough into 1.5 inch balls and place on an ungreased cookie sheet.  Bake 10 minutes or until edges are golden brown.  Remove to a wire rack to cool.  Makes about 30 cookies.

That’s IT!

When I made mine, I found the baking time was more like 12-14 minutes, but maybe my cookies were too big.  Also, I added craisins because though lemony goodness is the shit, cranberry-lemony goodness is heaven.  Finally, when my were done cooling, I gently dipped the tops in a little powdered sugar for purtyness’ sake, and because lemon bars always have powdered sugar on top.
